Snails braised with rice
A Cretan homemade recipe worth trying:
Ingredients we will need:
- 300 g Snails about 20 – 30 pieces
2 tablespoons vinegar
Half an onion, finely chopped
2 tablespoons olive oil
1 bay leaf
Salt and freshly ground pepper
1 cup sweet ripe, mashed tomatoes
1 cup rice for risotto
2.5 cups of water
- Instructions:
Prepare the snails (Snails) well. Rinse well, clean from the membranes and rub the shells with a sponge. Put a pot of water and 2 tablespoons to boil, add the snails and cook for 2 minutes. Then he wants a good rinse until all the saliva is gone and the water comes out clean.
Then put the olive oil and onion in a saucepan and cook until the onion becomes transparent. Add the snails and sauté for 2 minutes. Then add the tomato, bay leaf, salt and pepper, cover the pot and simmer for 20 minutes. In the middle of cooking, check and add a little water, if necessary. - Remove the snails with a slotted spoon, add the water and rice and turn up the heat to bring it back to a boil. Cover, lower the heat and simmer for 10 minutes. Add the snails, stir lightly and continue cooking for another 6 minutes. Finally, turn off the heat and leave the pot on the stove for an additional 4-5 minutes or until all the liquid is absorbed by the rice.
Serve and have a good appetite !!
