Spinach with rice
Materials:
- 1 kg of spinach
- 1 onion, finely chopped
- 3 spring onions, finely chopped
- 1 ripe tomato, finely chopped
- ¾ φλ. Carolina rice or icing
- 1 bunch of dill, finely chopped
- 1 cup olive oil
- 1 glass of hot water
- 1 lemon (its juice)
- Salt
- Pepper
Execution procedure:
- Clean and wash the spinach very well and then cut it into chunks.
- Heat the olive oil in a saucepan and then sauté the onion (dry and fresh) for 4 minutes.
- Add the spinach, tomato and rice. Stir well until the rice is shiny and the spinach is dry. Add water, salt, pepper and simmer for 15 minutes.
- Add the dill and lemon juice and continue cooking for another 5-10 minutes.
