Spinach with rice

Materials:

  • 1 kg of spinach
  • 1 onion, finely chopped
  • 3 spring onions, finely chopped
  • 1 ripe tomato, finely chopped
  • ¾ φλ. Carolina rice or icing
  • 1 bunch of dill, finely chopped
  • 1 cup olive oil
  • 1 glass of hot water
  • 1 lemon (its juice)
  • Salt
  • Pepper

 

Execution procedure:

  1. Clean and wash the spinach very well and then cut it into chunks.
  2. Heat the olive oil in a saucepan and then sauté the onion (dry and fresh) for 4 minutes.
  3. Add the spinach, tomato and rice. Stir well until the rice is shiny and the spinach is dry. Add water, salt, pepper and simmer for 15 minutes.
  4. Add the dill and lemon juice and continue cooking for another 5-10 minutes.
